Brigit's Cooks Ltd operates a busy central production kitchen, supplying pastries, cakes and afternoon tea items for its Covent Garden bakery, bus tours and catering operations across London. As production volumes increased, the business recognised the need for a trusted, practical food safety framework that could grow with them – they chose SALSA.
From the outset, the audit process was approached as a learning opportunity rather than a tick-box exercise. This commitment was evident to SALSA Auditor Fidelma Pogorelow, who has supported the business through successive audits:

Clear communication with food handlers, visible food safety messaging and confident, well-trained staff were all highlighted during audit visits.
